IN THE KITCHEN
Carne Asada on Brioche Bun
1lb of inside round steak very thin (pound)
1/4 cup of seasoned salt
for the marinade
12oz of beer
2oz ( two shots) tequila
1/3 cup of chopped cilantro
1/3 cup of chopped shallots
1/3 cup of dry oregano
1 cup of lime juice
1/3 cup of salt
Place the steak in a mixing bowl and add the seasoned salt. Set aside. In a different container, combine all the ingredients for the marinade. Wisk to combine. Add the steaks and let sit, covered, for 12 to 24 hours.
North Carolina BBQ Pulled Pork Sandwich
1lb of smoked pulled pork (ready made)
1 cup of North Carolina BBQ sauce
4 brioche buns
North Carolina BBQ sauce
1PT apple cider vinegar
2 TBL garlic powder
1/2 cup diced onion
1 TBL fine black pepper
1 tsp red pepper flakes
2 PT BBQ sauce or ketchup
Combine all ingredients in a bowl, mix with a wisk, and combine with pork.
Homemade Potato Chips
2 Idaho potatoes, washed and thinly sliced
2 QT of vegetable oil
salt and pepper, to taste
Heat the oil to 350 degrees. Once the oil is to temp, drop the potatoes in slowly. Cook for about 2 to 3 minutes until golden brown. Remove, place on a paper towel to cool and season.
