Ingredients
1/4 c. burghel, fine cracked wheat
2 c. finely chopped parsley
16 0z. firm red tomatoes, washed and finely chopped
1/2 c. finely chopped fresh mint leaves
1/4 c. finely chopped onion
1/2 c. fresh lemon juice
1 tsp. salt
1/2 c. extra virgin olive oil
Directions
Combine all ingredients. Adding tomatoes and lemon first with burghel.
Mix and serve wrapped inside lettuce.
Garnish with lemon, tomato and cucumber slices.
